Sorry, no. The Matlab response supports only one PV at a time...

If you mean, can you get apply some processing on the data; then yes. You should be able to get mean_600 etc of the raw data as a Matlab response. ca_count and ca_how are used mostly for integrations with ChannelArchiver; but the other post processing operators
should work.
