Why two PCs?  I'm sure you could do fine with just one.  (But maybe
that's an intentional decision to demonstrate something?)

Why does the switch need to be managed?  It would probably be cheaper
if unmanaged.  (But maybe the prices have come down such that it's an
insignificant difference now?)

I don't know anything about the Pynq-Z2; is there an EPICS driver for
it?  If not, something else that comes to mind that you might consider
would be some USB devices from Measurement Computing.  Mark Rivers
has written EPICS drivers for some of them in his EPICS module called
measComp:
