It is perceived to be a security improvement. The irony of using the same approach that scammers use to "protect" against spamming is very apparent when Thunderbird reports a URL mismatch (see attached image).

Using html view instead, I can see the correct link targets, but when
clicking them I get a phishing warning from the mailclient as they don't
lead to the location they advertise.

So in either case, I need to manually copy, edit, confirm... is this
supposed to be a security improvement?
