Not really true. The document does not say that the 750GX is not
part of the PPC604 architecture. It doesn't mention the 750GX at
all, which is understandable, as the 750GX did not exist when
VxWorks 5.5 came out.
While in document "vxworks architecture supplement 6.7", it
shows as follows, which says PowerPC 750GX belongs to PPC604.

So, I am not sure if PPC604 in vxWorks5.5Âincludes PowerPC
750GX. Isn't theÂ"PPC604" in vxWorks5.5 and vxWorks6.7 the
same?ÂIn my EPICS environment, can I choose CPCI6190 board?
So, your question boils down to: Is anyone sucessfully running
VxWorks 5.5 on a PPC 740 GX? You might consider asking that question
on a VxWorks mailing list - these guys have more experience with the
variety of CPUs and VxWorks releases.
The other question that comes to mind: Do you have the VxWorks 5.5
BSP for the CPCI6190 board?
If yes: the board is obviously supported.
If no: Which BSP are you planning to use for the CPCI6190?
