I am trying to use the setItems method for setting the combo box items but I'm struggling with getting the single items from the enum PVs.

You might also update the enumeration meta-data on the IOC side.

As long as the appropriate phoebus property is set to "true" (not the default):

org.phoebus.pv.ca/dbe_property_supported=true

Then changes to the enumeration string fields of mbbiRecord (eg. ZRST) will be reflected.
